Buttered Potato Duo Hash

I had 1 sweet potato left after I made the sweet potato chips so I decided to make the easy peasy sweet potato hash as a side dish to pan-fried white fish. But then I saw the red skin potatoes then I thought, “hmmm, what would happen if I combined sweet potatoes with red skin potatoes?” What happen was, I came up with a delicious potato hash side dish that’s worth repeating over and over and over and over again.

Peel the sweet potato, chop in cubes. Peel 3 medium red skin potatoes, chop in cubes. Melt 1/2 stick of butter in a pan. Add the sweet potatoes into the pan and let that cook for about 5 minutes or so. Sweet potatoes cook longer so cook ‘em first. Add the other kind of potatoes into the pan plus the remaining butter. Add more butter too if necessary. Season with paprika, salt & pepper. Stir cover the pan and continue to cook until fork tender. Try not to stir too much to avoid mashing the potatoes.

Serve as a side dish to fish, alongside a bed of greens. Healthy (except the butter part but..), delicious and so easy to make.
