Vanilla Crinkle Cookies

This is the vanilla version of the chocolate crinkle cookies. Paula Deen’s version of the chocolate kind uses cream cheese and cake box mix. Either cookies are yummy and the whole family would love them. I didn’t bother taking step-by-step pictures for this one so feel free to just refer to the aforementioned 2 linked recipes. With the obvious changes of course, like these are vanilla and not chocolate therefore the ingredients have slight changes. That, you can refer to in the recipe guide below.

Recipe: Vanilla Crinkle Cookies

  • 1 ½ cup of flour
  • 1 cup granulated sugar
  • ¼ cup vegetable oil
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 cup + confectionery sugar

  1. Mix sugar and vegetable oil until well combined. Beat in the eggs one at a time then the vanilla extract.
  2. In another bowl, combine flour, baking powder and salt. Gradually add to the batter bowl and beat until well blended. Cover the bowl with saran wrap to chill in the fridge for 3-4 hours.
  3. Put the confectionery sugar in a platter or a ziploc bag.
  4. Preheat the oven to 355°
  5. Once chilled, scoop the dough with a big spoon or a mini ice cream scoop. Using your hands, form a ball from the dough.
  6. Do these until you have about 4 or 5 then roll em up in the confectionery sugar to coat. If using a ziploc bag, dump the balls in the bag, close then shake shake shake.
  7. Place the cookie balls in a cookie sheet. Bake them in the oven for 8-10 minutes. Do this in batches. Cool the cookies in a rack after baking.

Great for after-school snack with a cup of milk.
