Feistycook’s Version Of Better Homes & Garden’s Apple Chimichangas

I was scrolling Facebook a couple of weeks ago when I came upon a video of 20-minute Apple Pie Chimichangas from Better Homes & Garden. I did a quick mental inventory of what I have in my fridge and realized I have all the ingredients to make some. So I did. The family loved it!

Recipe: Apple Chimichangas

  • 3 apples, peeled and chopped
  • powdered cinnamon
  • granulated sugar
  • flour tortillas(I used large)
  • oil for frying
  • 1 tbsp of milk
  • 1/2 cup of powdered sugar

  1. In a bowl, mix together the chopped apples, sprinkle of powdered cinnamon and granulated sugar. (*Note about this in the bottom*)
  2. In another plate, mix sugar and powdered cinnamon.
  3. Heat up oil in a pan. Assemble the chimichangas. Place some apple filling on a flour tortilla. Roll and secure tightly. Repeat until you’re rolled all of the chimichangas.
  4. Fry each in the pan, 30-45 seconds each side. Roll ’em up in the sugar and cinnamon mixture.
  5. For the glaze, mix together milk and powdered sugar. Sprinkle on top of the apple chimichangas.

For the apple filling, you can opt to cook it in a small pot beforehand with a little bit of butter to soften them up. I might do that the next time I make this very easy and simple apple chimichangas. Eat as is or with vanilla ice cream. Now we’re talking!
