Dutch Baby Pancakes

Save this for weekend breakfast or brunch. Or whenever really. You probably have all the ingredients to make Dutch Baby Pancakes in your pantry. There truly is nothing to it. The most important thing is the heat therefore it’s important that you hit that oven on to 400° before everything else.

Dutch Baby Pancakes

Ingredients
  

  • 3 eggs
  • 3/4 cup milk
  • 3/4 cup flour
  • a pinch of salt
  • 4 tbsp sugar
  • 1 tsp vanilla
  • 1/2 stick butter
  • generous sprinkle of confectioners sugar

Instructions
 

  • Preheat the oven to 400°. Divide the butter into 2 cast iron skillets or non-stick pans. Stick 'em into the oven to melt . Watch carefully in order not to burn 'em. In a blender, combine eggs, flour, milk, salt, sugar, and vanilla. Blend together until foamy. 
  • Pour the batter into the skillets. 
  • Bake in the oven for 25 minutes. 
  • Sprinkle with confectioners sugar. Serve immediately with either syrup or fruit compote.
