Spinach-Artichoke Hearts & Bacon Quiche W/ Feta & Mozzarella Cheese

My husband had been talking about a spinach quiche that he got from his workplace’s test kitchen last week so he suggested I make one. I love quiche myself but I don’t make it that often because it actually takes a little bit of prep and time to make one. It’s all worth it in the end though once you bite into a slice of creamy and cheesy quiche. I have a recipe for Spinach & Portobello Mushrooms Quiche with crust which was really good but this Spinach-Artichoke & Bacon Quiche W/ Feta And Mozzarella Cheese with no crust was easier to make and it definitely saved me some time.

So, do I prefer crust or no crust quiche? Frankly, I like both since I just love quiche in general. I think it just depends on how much time I want to spend in my kitchen. I’ll try to remember to have my morning cup of coffee first though before I set out to make another quiche next time. You’ll find out from the how-to video why. Spinach-Artichoke Hearts & Bacon Quiche W/ Feta And Mozzarella Cheese

Ingredients
  

  • 6 eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 shredded mozzarella cheese (divided) (divided)
  • 1/2 block feta cheese (divided)
  • 1 sm can/jar of artichoke hearts (discard the liquid)
  • 1/2 bag fresh spinach
  • 3-4 pcs bacon (cook then chopped)
  • cooking spray for the pan
  • salt & pepper to season

Instructions
 

  • Spray quiche or pie pan with cooking spray then set aside. 
    Cook the bacon. Chop and set aside. Reserve a little bit of bacon fat. Use the same pan to sauté artichoke hearts and spinach. Season with a sprinkle of salt & pepper. Sauté until the spinach wilts. Take the pan out of the heat and let it cool down. 
  • Preheat the oven to 350°
    In a bowl, whisk eggs. Add heavy cream then whisk again. Add sour cream and half of the shredded mozzarella cheese. Mix everything together. 
  • Add and stir in half of the crumbled feta cheese. Then the chopped cooked bacon. Stir in the sautéed spinach and artichoke hearts. Transfer the whole thing into the quiche pan. Add the remaining feta cheese and mozzarella cheese on top. 
  • Bake it in the oven for 45 minutes. Let it cool for 5-10 minutes before serving. 

VOILA, Spinach-Artichoke Hearts & Bacon Quiche W/ Feta And Mozzarella Cheese with no crust. Make it this weekend for breakfast or brunch with family and friends. Remember, wake up early to make it and enjoy that quiet time in the kitchen with your coffee while you cook and prepare something cheesy and scrumptious for everyone.
