Sweet & Creamy Filipino Macaroni Salad

This Macaroni Salad is sweet, creamy, and tastes like my childhood. This is actually the first time I’ve made it because I tend to go towards the Filipino Fruit Salad during the Holidays or other special occasions where I make desserts. For Emma’s 15th birthday I thought I’d finally make the Macaroni version. Scott wasn’t sure about it because of the raisins but he ended up liking it.

BTW, this is a make-ahead dish because it needs to chill in the fridge overnight.

Sweet & Creamy Filipino Macaroni Salad

Ingredients
  

  • 1 box elbow pasta cook al dente
  • 1 1/2 cup mayonnaise
  • 2 cans condensed milk
  • 2 cans fruit cocktail drained
  • 1 can pineapple chunks drained
  • 3 boxes small boxes of raisins
  • 1 jar coconut gel (refer to NOTES for link) drained

Instructions
 

  • Boil and cook the elbow macaroni pasta, al dente. Drain the water. Drain the syrup of fruit cocktail, pineapple, and coconut gel. In a bowl, combine the macaroni pasta, fruit cocktail, coconut gel, and raisins.
  • Stir everything together.
  • Add the mayonnaise and condensed milk.
  • Stir everything together. Cover the bowl and chill in the fridge overnight.

Serve as a dessert or a side salad with the main party menu.

Mmmmmm, so good. I love the creaminess and sweetness that you can definitely serve this as a dessert too. It’s very easy to make that’s perfect for summer parties or to bring to potluck BBQs. Enjoy.
