Wash the potatoes thoroughly. Cut them in thin strips. Soak them in cold water as you cut. First Fry: Heat up oil, low-medium, in a pot. In small batches, fry up some of the cut potatoes. 1st fry takes 4 minutes. Carefully take out of the pot. The potatoes should be soft and limp. Drain the excess oil in a colander or paper-towel lined plate. Repeat this process for the remaining cut potatoes.
Second Fry: Turn up the heat a little bit more. Again, in small batches, fry up the fries until golden brown. Drain the fries in another paper-towel lined plate.
