Mashed Potatoes W/ Caramelized Onions
A twist to the usual mashed potatoes is by adding caramelized onions. It sounds fancy, but trust me it’s very simple and so easy to make. And FYI, you don’t need sugar to caramelize the onions.
Mashed Potatoes W/ Caramelized Onions
Ingredients
- 6-8 medium potatoes peeled & halved
- water for boiling
- 1 1/2 stick butter (+ more)
- 1 large onion cut in rounds
- salt & black paper to taste
Instructions
- Boil the potatoes until soft and tender.
- On a non-stick pan, medium heat, melt a stick of butter with sliced onions. Use a regular yellow onion or Vidalia. I used the latter since I had leftovers from the tossed salad nights ago. That’s all you need to caramelize onions. Butter and onions. Cook the onions until brown. Add more butter if needed.
- Once the potatoes are done, totally soft and all, drain the water. Add the caramelized onions onto the potatoes, with the melted butter. Season with salt and pepper. Add more butter if you want to. Technically, you’ll already have butter with the onions but a little bit more wouldn’t hurt. Add milk. Season with salt & black pepper to taste. Mash the potatoes and onions together.
Perfect side dish for Thanksgiving or Christmas dinners. Or anytime 🙂
