Cookie Dough Cupcakes
The cookie dough cupcakes recipe was from a Tasty video posted on Facebook. I promised Emma we’re going to make the 6 different cupcakes during the weekends. She wanted to do the cookie dough first so I figured the cupcakes would be great as our Super Bowl treat. But of course we ate some before the Sunday’s game.
The recipe from the video is pretty straight forward since it’s using a cake batter mix. You can make the batters from scratch if you prefer it that way. We used cake mix and chocolate chip cookie mix to make it easier for Emma and also considering my lack of counter space. So, aside from the mixes, just read the instructions on the boxes for other ingredients and instructions which I will go through in the step-by-step below.
Cookie Cough Cupcakes
Ingredients
- 1 box white cake mix
- 4 egg whites
- 1/2 cup vegetable oil
- 1 packet chocolate chip cookie mix
- 1 stick butter
- 1 egg
- cupcake liners
- 1 stick butter
- 1 brick cream cheese
- a pinch salt
Instructions
- According to the box, mix the cake batter(mix, egg whites, vegetable oil). Set aside.
- According to the packet, mix the chocolate chip cookie batter(mix, egg, butter).
- Scoop a spoonful of the cookie dough then form a ball. Set them in a nonstick pan or baking mat. Preheat the oven to 350degrees.Fill each of the cupcake liners with half of the cake batter, place 1 cookie dough ball on each, then pour remaining cake batter on each top. Bake them in the oven for 20 minutes.
- Cool the cupcakes completely.
- Make the frosting. Beat butter, cream cheese, powdered sugar, and a pinch of salt.
- Frost the cupcakes. Garnish with chocolate chips if you want.
That cookie surprise in the middle is really good.
This recipe made 20 cupcakes. I was going for 24 but halfway through I realized I was being generous with the cake batter so watch the amount of the first pour. The good thing is I had extra cookie dough so I baked that too afterwards. If you have kids who loves to bake this is a good one to start with. Enjoy!
