Spaghetti With Meatballs & Air-Dried Sausages

I’m just posting this Spaghetti With Meatballs & Air-Dried Sausages now but, I made this the week after I posted the Air Dried Spicy Sausages With Onions & Green Peppers recipe. Like I said, we’d go back to the store to get more because they’re really good.

My mother-in-law makes her spaghetti with meatballs and sausages and I can’t remember the last time I made the same thing. I usually just make spaghetti with regular ground beef mixed into the sauce. I figured it was time to level it up a bit. This is perfect for huge get together with friends. Make salad and garlic bread on the side and of course, wine for adults.

Spaghetti With Meatballs & Air-Dried Sausages

Ingredients

  • 2 pounds ground beef
  • 1 egg
  • 1/2 cup bread crumbs
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 jars/cans spaghetti sauce
  • 2 tbsp sugar
  • salt & pepper
  • 4 links air-dried sausages
  • 1 cup water
  • 1 boz angel hair pasta
  • water for boiling the pasta
  • 2-3 cups reserved pasta water
  • ground parmesan cheese

Instructions

  • Boil water to cook the angel hair pasta, al dente. Reserve 2 to 3 cups of pasta water.
Preheat oven to 350°. In a bowl, combine ground beef, 1/2 tsp of dried basil, 1/2 tsp dried oregano, 1/2 tsp garlic powder, 1/2 tsp onion powder, egg, bread crumbs and sprinkle of salt and paper. Mix everything together by hand. Form balls then place in a pan with foil. Bake until  browned, about 30-35 minutes. Once baked, take them out of the oven and set aside.
  • Poke holes on the sausages using a fork. In a pan, steam the sausages with water until the sausages renders its own fat. Cook until browned then slice in chunks.
  • Simmer the spaghetti sauce. Season with the remaining dried basil, dried oregano, garlic powder, onion powder, sugar, and sprinkle of salt. Add the reserved pasta water, meatballs, and sausages. Stir and continue to summer for 5 more minutes or so.

VOILA! Sprinkle generously with ground parmesan cheese on top.
