You might find yourself in the middle of your kitchen one day thinking about making a cornbread but you don’t have a can of creamed corn. But you do have a can of corn kernels, it’s not just creamed. Well, you have milk, sugar and blender, right? A-Ha!

Basic Cornbread Recipe

  • 1 can corn kernels, drained
  • 1 cup milk
  • 1/4 cup sugar
  • 1 cup cornmeal
  • 1/2 cup flour
  • 1/2 tsp salt
  • 3 tbsp sugar
  • 2 tsp baking powder
  • 1/2 stick butter melted and cooled
  • 1 egg slightly beaten

  • Preheat the oven to 355°. Butter/grease a square baking pan. Set it aside,
  • Combine and mix the corn kernels, milk, and sugar together in a blender.
  • In a bowl, whisk together the flour, sugar, baking powder, and salt. Pour the creamed corn, beaten egg, and melted butter. Stir everything together to mix.
  • Pour into the buttered pan then bake in the oven for about 20 minutes. Cool in a rack.

Turn the pan over into a bread board then cut in squares.

Top with butter. Serve the cornbread as a side dish to any baked, grilled or fried meat or fish.
