Chicken In Crunchy Peanut Butter Sauce
I got a craving for peanut butter the other day at the same time I was thinking about what to make for dinner. The idea of a chicken and peanut butter combo appealed to me. A recipe from Connie of Casa Veneracion looked delicious so I decided to adapt it with a little bit more of spicy flavor.
Chicken In Crunchy Peanut Butter Sauce
Ingredients
- 5-6 chicken pieces (legs, thighs)
- 3 tbsp vegetable oil
- 1 onion chopped
- 3 cloves garlic chopped finely
- 1 thumb-size ginger chopped finely
- 3 tbsp soy sauce
- 3 tbsp rice wine vinegar
- sprinkle of black pepper
- 1/2 cup crunchy penaut butter
- 1 cup water
- sprinkle of red pepper flakes (more if you want it spicy)
Instructions
- Heat up oil in a saute pan. Brown the chicken pieces, 3 minutes on each side, skin side down first.
- Add garlic, onions, ginger, water, soy sauce, rice wine vinegar, black pepper, and a little bit of red pepper flakes. Stir everything together. Cover the pan and let the mixture boil.
- Stir in the crunchy peanut butter, lower the heat, cover the pan then simmer for 35-40 minutes. Stir occasionally.
Transfer in a serving bowl. Garnish with chopped parsley.
Serve with rice and veggies. I’m glad I used crunchy peanut butter coz the peanuts added a welcomed crunchy texture. Seriously, this was good.
