Chicken In Crunchy Peanut Butter Sauce

I got a craving for peanut butter the other day at the same time I was thinking about what to make for dinner. The idea of a chicken and peanut butter combo appealed to me. A recipe from Connie of Casa Veneracion looked delicious so I decided to adapt it with a little bit more of spicy flavor.

Chicken In Crunchy Peanut Butter Sauce

Ingredients
  

  • 5-6 chicken pieces (legs, thighs)
  • 3 tbsp vegetable oil
  • 1 onion chopped
  • 3 cloves garlic chopped finely
  • 1 thumb-size ginger chopped finely
  • 3 tbsp soy sauce
  • 3 tbsp rice wine vinegar
  • sprinkle of black pepper
  • 1/2 cup crunchy penaut butter
  • 1 cup water
  • sprinkle of red pepper flakes (more if you want it spicy)

Instructions
 

  • Heat up oil in a saute pan. Brown the chicken pieces, 3 minutes on each side, skin side down first.
  • Add garlic, onions, ginger, water, soy sauce, rice wine vinegar, black pepper, and a little bit of red pepper flakes. Stir everything together. Cover the pan and let the mixture boil.
  • Stir in the crunchy peanut butter, lower the heat, cover the pan then simmer for 35-40 minutes. Stir occasionally.

Transfer in a serving bowl. Garnish with chopped parsley.

Serve with rice and veggies. I’m glad I used crunchy peanut butter coz the peanuts added a welcomed crunchy texture. Seriously, this was good.
