Pork In Sweet Chili Sauce Stir-Fry

This is a stir-fry version of fried pork chops in sweet chili sauce. Since it’s a stir-fry the pork which was sliced in nuggets bite-size were dipped into a batter first before frying, ala sesame chicken or Hibachi coconut chicken.

Pork In Sweet Chili Sauce Stir fry

Ingredients
  

  • 1-2 pounds boston pork butt sliced in nuggets size
  • 1 egg
  • 1 1/2 cup flour
  • 1 cup water
  • 1/2 cup cornstarch
  • 1 tbsp baking powder
  • salt & pepper
  • oil for frying
  • 1 1/2 cup sweet chili sauce
  • 1 tbsp cornstarch
  • 1/2 cup water

Instructions
 

  • Heat up oil in a small pot or fryer. Whisk together a beaten egg, cornstarch, flour, baking powder, salt and pepper. Dip the pork in the batter. Do this in batches. Fry the battered pork nuggets into the hot oil. Do this in batches as well. Drain the oil of the fried pork using a strainer with a pot or bowl underneath.
  • Heat up the wok or a pan. Pour the sweet chili sauce then add the fried pork nuggets. Mix 1 tbsp of cornstarch with water. Stir into the wok to thicken the sauce. 

Transfer into a platter and top with the garnish of your choice. Use chopped scallions or chopped celery leaves.

Serve with rice!
