Chorizo Breakfast Tacos Charcuterie (Huevos Rancheros Ala Dexie)

The original plan was to have Huevos Rancheros for breakfast but with chorizo and scrambled eggs as opposed to sunny side eggs. Also, small flour tortilla instead of toasted corn tortillas because it’s hard for me to eat crunchy tortillas nowadays. So the Huevos Rancheros progressed into breakfast tacos as we assembled and ate our breakfast because how do you eat it in the first place once you fold the soft filled tortilla?

My point is, please do not get mad at me that this does not look like an authentic Huevos Rancheros. We still enjoyed it despite the chorizo being salty. Overall my Huevos Rancheros Charcuterie turned breakfast tacos were a hit.

Chorizo Breakfast Tacos Charcuterie (Huevos Rancheros Ala Dexie)

Ingredients
  

  • 6 eggs
  • 1 tbsp milk
  • 2 tbsp butter
  • sprinkle of salt & pepper
  • 1 pound chorizo meat (or use chorizo sausage link)
  • 1 cup salsa
  • 1 cup refried beans warmed
  • 1 cup shredded cheddar cheese
  • 2 sm tomatoes
  • 1 pc scallions chopped
  • sprinkle of salt & pepper

Instructions
 

  • Make pico de gallo with chopped tomatoes, scallions, salt & pepper. Add chopped cilantro if available. Set aside.
  • Heat a pan to brown the chorizo meat. Take out the grease from the pan. Set aside.
  • Beat eggs, milk, salt & pepper. Melt butter into a skillet. Make the scrambled eggs however you do it.
  • Warm up flour tortillas in the oven, 340° for a minute or 2.
  • Arrange the pico de gallo, refried beans(warmed in the microwave), shredded cheese, salsa, scrambled eggs, chorizo, and flour tortilla in a board.

Again, I know it’s not the authentic Huevos Rancheros but humor me because I happen to think the charcuterie style of serving it was pretty and clever.

Here’s how I assembled mine. See, it looks like Huevos Rancheros with chorizo and scrambled eggs. It was delish in my opinion and my daughter loved it too.
