White Beans Chicken Chili
This White Beans Chicken Chili recipe was from my mother-in-law. I haven’t made it in a while and it popped up in FB Memories today so I’ve figured I’d repost the archives from my old cooking blog. To save time you can use rotisserie chicken from the grocery store and canned beans. Cooking time would definitely be shorter. I didn’t do that in this recipe so cooking time is longer in the crockpot. In any event, this White Beans Chicken Chili is just as delicious, filling, and warm as my Easy Homemade Chili With Beans during this cold season.
White Beans Chicken Chili
Ingredients
- 1 bag Norhern Beans
- 1 can corn
- 1 jar salsa
- 2 chicken leg quarters
- 1 cup chicken broth (or water) (add more if necessary)
- cumin to taste
- shredded cheese
Instructions
- Wash and rinse the Northern Beans. Set aside.
- Put the corn, salsa, chicken, broth, beans, and cumin in the crock-pot. Set it in high to cook. I started at 11am. After cooking for 4 hours or so, gently take out the chicken from the pot. Pull the meat apart from the bones then put the meat(minus the bones of course) back into the pot. Stir everything around then cook until the beans are completely soft.
VOILA, White Beans Chicken Chili.
Serve the white chili in individual bowls. Sprinkle shredded cheese on top.
