Ranch Pork & White Beans Stew

I like having variety beans in my pantry. I buy different kinds, transfer them in recycled spaghetti or salsa mason jars, cover them up tightly then store in the pantry. It’s easy to throw in with a protein(pork mostly) in a crock-pot and just cook away the rest of the day while you do other things. You don’t even need to thaw the meat. Let the crock-pot do what its meant to do. Convenient and very scrumptions come dinner time.


Here’s an example of what beans I have in the pantry right now. Black, white, and Pinto. Gotta remember to replenish my supplies with Split-Peas.

I also love having packets of Ranch dressing seasoning mix on hand. It adds so much flavor in dishes like this, the Dutch Oven Ranch Pork Tips, and Pepperoncini Pork Sandwiches.

Ranch Pork & White Beans Stew

Ingredients
  

  • 1-2 pounds pork chunks
  • 1 packet Ranch dressing seasoning mix
  • 2 cups white beans (rinsed thoroughly)
  • sprinkle of salt & pepper
  • sprinkle of dried Italian seasoning
  • sprinkle of chili powder
  • 1 cups water
  • chopped parsley for garnish

Equipment

  • crock-pot

Method
 

  1. Put 1/2 cup of water in the crock-pot. Add the pork chunks/cubes.
  2. Add the white beans.
  3. Season with dried Italian seasoning, chili powder, salt and pepper.
  4. Pour the Ranch dressing mix on top. Add the remaining water. Cover the pot and set it in LOW(if you start at 9 or 10am), in HIGH(if cooking at 11am).
  5. Check the pot within an hour and a half of cooking just to stir everything around. By this time the pork should be thawed. Cover it back up and continue its slow-cooking process.
  6. Check again close to the final hour. Taste to adjust the seasoning. Sprinkle more salt and pepper if needed.

You can serve this as is in a bowl but we love it with rice. It sure sticks to your ribs, HAH!

You can make Ranch Pork & White Beans Stew anytime but I reckon’ it’s very convenient during busy days and when the weather starts to get cooler around Fall and then winter. It’s warm, hearty, and delicious as is or with rice.
