Ranch Pork & White Beans Stew

Ingredients
  

  • 1-2 pounds pork chunks
  • 1 packet Ranch dressing seasoning mix
  • 2 cups white beans (rinsed thoroughly)
  • sprinkle of salt & pepper
  • sprinkle of dried Italian seasoning
  • sprinkle of chili powder
  • 1 cups water
  • chopped parsley for garnish

Equipment

  • crock-pot

Method
 

  1. Put 1/2 cup of water in the crock-pot. Add the pork chunks/cubes.
  2. Add the white beans.
  3. Season with dried Italian seasoning, chili powder, salt and pepper.
  4. Pour the Ranch dressing mix on top. Add the remaining water. Cover the pot and set it in LOW(if you start at 9 or 10am), in HIGH(if cooking at 11am).
  5. Check the pot within an hour and a half of cooking just to stir everything around. By this time the pork should be thawed. Cover it back up and continue its slow-cooking process.
  6. Check again close to the final hour. Taste to adjust the seasoning. Sprinkle more salt and pepper if needed.
