Bacon & Mushrooms Egg Noodles Casserole

Another simple and easy cheesy egg noddles casserole recipe using bacon and mushrooms. Enjoy.

Bacon & Mushrooms Egg Noodles Casserole

Ingredients
  

  • 1/2 bag egg noodles cook al dente
  • water for boiling the egg noodles (save 1 cup of the noodles water)
  • 6-8 pcs bacon chopped
  • 1 sm onion chopped
  • 1 cup milk
  • 2 tbsp flour
  • 1 1/2 cup shredded cheddar cheese divided
  • 2-3 pcs button mushrooms sliced
  • sprinkle of garlic powder
  • sprinkle of salt and black pepper

Method
 

  1. Boil water to cook the egg noodles al dente. Drain the water off once egg noodles have cooked but save a cup of the water.
  2. Brown the chopped bacon. Add the chopped onions to soften. Then add the flour. Whisk to make a roux. Add the milk and continue to whisk to blend everything together. Stir in 1/2 cup of shredded cheddar cheese to melt. Preheat the oven to 350°
  3. Add the reserved water and sliced mushrooms. Season with garlic powder, salt & pepper. Stir everything together and cook for about 2-3minutes or so. Stir cooked egg noodles.
  4. Transfer the whole thing in a casserole dish.
  5. Sprinkle the remaining shredded cheddar cheese. Bake it in the oven for 25-30 minutes.
