Ham & Pesto Spaghetti

Last Christmas we had Ham as our main entrée. Of course we had leftovers. Look at the size of that Ham.

I sectioned off leftovers for future dishes and stored them in the freezer. Fast forward to this month, I made Ham & Pesto Spaghetti served with Garlic Bread.

Ham & Pesto Spaghetti

Ingredients

  • chopped up leftover Ham (or buy Ham steak and chopped it up)
  • 1/2 onion chopped finely
  • 2 cloves garlic smashed and chopped finely
  • 1 tbsp oil for Sautéing
  • 3-4 spoonfuls of Pesto
  • spaghetti noodles cooked al dente
  • water for boiling the spaghetti
  • 3 cups reserved pasta water
  • sprinkle of salt, black pepper
  • 1/2 cup Grated Parmesan Cheese (+ more for serving)

Method

  1. Boil water for the spaghetti noodles. Save 3 cups of the pasta water. In a saute pan, heat up oil then saute garlic, onions, and chopped Ham for 5 minutes or so.
  2. Season with salt and black pepper.
  3. Add the reserved Pasta water. Then stir in the Pesto sauce.
  4. Stir in the al dente spaghetti noodles.
  5. Stir in grated parmesan cheese.
  6. VOILA!

Serve with Garlic Bread.

Don’t forget the Parmesan Cheese. Buon appetito!
