My No-Frills (But Yummy) Meatloaf

When I made this a couple of weeks ago I wasn’t sure if I should add it in the blog archives because I know I already have a couple of meatloaf recipes here but then I remembered the one I have is stuffed with cheese, spinach, and mushrooms. That’s definitely NOT a basic meatloaf, HAH! There is another one with barbecue sauce. Now, this meatloaf is quite basic. When Caine asked if there’s a special sauce for it, Scott and I joked that yes there is a special sauce called Ketchup. HAHAHAHA!

That’s about as no-frills meatloaf as you can get but don’t let that fool you because this is actually quite yummy. Even Emma, who is a picky eater, gave it her 2 thumbs up.

My No-Frills (But Yummy) Meatloaf

Ingredients
  

  • 1 sm onion chopped
  • 1 egg
  • 3/4 cup breadcrumbs
  • 1 tsp garlic powder
  • 1 cup ketchup divided (+ more for last topping)
  • 1 tsp Italian seasoning
  • salt & pepper
  • 1 tbsp Worcestershire sauce

Instructions
 

  • Preheat the oven to 350° In a huge mixing bowl combine the ground meat, chopped onions, egg, garlic powder, Italian seasoning, 1/2 cup of ketchup, bread crumbs plus salt and pepper. Use your hands to mix everything together.
  • Press the meat mixture in the loaf pan. Brush the top with the last 1/2 cup of ketchup.
  • Cover with foil then bake it in the oven for 45 minutes. Take it out of the oven after 45 minutes, take the foil out then brush the top with a little bit more of ketchup. Return to the oven to bake for another 15 minutes. 
  • Transfer in a serving platter. Slice carefully.


Serve with mashed potatoes and peas(or whatever veggies you like).
