Family Favorite: Chicken Schnitzel

This Chicken Schnitzel dish is always a hit with the family. I love Panko Bread Crumbs and have used it in cooking for years but this Panko Bread Crumbs Blend(Italian Herb with Garlic & Sea Salt) from Ollie’s is THE BEST! I make sure to stock up on it whenever we go to Ollie’s.

Family Favorite: Chicken Schnitzel

Ingredients
  

  • 3-4 pcs boneless chicken breasts
  • oil for pan-frying
  • 1 1/2 cup flour (or more)
  • salt & pepper
  • 2 eggs
  • Panko Bread Crumbs Blend (use as much as you prefer/need)

Method
 

  1. Place the flour in a ziploc bag. Sprinkle salt & pepper to season. Beat 2 eggs in a bowl. Place some panko bread crumbs in a separate bowl/plate(might have to repeat this process depending how many pieces of chicken you're cooking).
  2. Slice the boneless chicken breasts in half. Pound with a meat mallet to tenderize.
  3. Do this in batches. Coat chicken pieces, one at a time, with flour, dip in the beaten egg, then coat with the Panko Bread Crumbs.
  4. Set them in a platter until ready to pan-fry.
  5. Heat up oil in a pan. Fry 3-5 minutes each side.
  6. Do not overcrowd.
  7. Repeat process with the rest.

VOILA! Chicken Schnitzel. Let me share a tip for my fellow sourdough breadmakers. Instead of using eggs, you can so use a discard + water mixture. It works perfectly fine. I’ve been doing that to save my eggs(for breakfast and baking) and use up my sourdough discard instead.

Serve with rice and corn or whatever starch & veggies combo you like. My daughter’s review every time I make this for dinner is: AMAZING.
