Buttermilk Pancakes

Ingredients
  

  • 2 1/2 cups flour
  • 3 tbsp sugar
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cup buttermilk (add a splash more if necessary)
  • 1 egg
  • 1/4 cup oil
  • butter
  • Maple Syrup

Method
 

  1. Whisk together flour, sugar, baking powder, baking soda, and salt.
  2. Beat 1 egg in a measuring cup or bowl.
  3. Stir in the buttermilk.
  4. Then the oil.
  5. Beat everything together.
  6. Add the wet mixture to the dry mixture.
  7. Whisk gently but keep it lumpy. Let the batter rest for 10 minutes.
  8. Melt butter in a elctric griddle or non-stick pan, on medium heat. Ladle aboout 3/4 cup batter into the pan for each pancake. 4-6 at a time. Cook for 2-3 minutes on first side.
  9. Flip the pancakes to cook the other side for another minute or so.
  10. Place them in the platter. Wrap the plate with foil to keep them warm while you cook the rest.
