Boil the boneless chicken breasts. Chopped coarsely.
In a bowl with the chopped boiled chicken, add scallions.
Then the cooked & chopped bacon.
Add 1/2 cup of ranch dressing.
1 cup of mayonnaise.
Shredded cheddar cheese..
Then the seasonings: salt & pepper, garlic powder, paprika, and dried Italian herbs. Eyeball the measurements.
Mix everything together.
Transfer into a container. Cover and let it chill in the fridge until ready to assemble your sandwiches(or sliders).
When ready to assemble, preheat oven to 350°. Butter both pieces of Ciabatta bread.
Spread chicken salad on one piece.
Top with smoked gouda cheese(or any cheese of your choice).
Place the top portion of Ciabatta bread. Toast the sandwiches in the preheated oven for 10-15 minutes.
