Chorizo Breakfast Tacos Charcuterie (Huevos Rancheros Ala Dexie)

Ingredients
  

  • 6 eggs
  • 1 tbsp milk
  • 2 tbsp butter
  • sprinkle of salt & pepper
  • 1 pound chorizo meat (or use chorizo sausage link)
  • 1 cup salsa
  • 1 cup refried beans warmed
  • 1 cup shredded cheddar cheese
  • 2 sm tomatoes
  • 1 pc scallions chopped
  • sprinkle of salt & pepper

Method
 

  1. Make pico de gallo with chopped tomatoes, scallions, salt & pepper. Add chopped cilantro if available. Set aside.
  2. Heat a pan to brown the chorizo meat. Take out the grease from the pan. Set aside.
  3. Beat eggs, milk, salt & pepper. Melt butter into a skillet. Make the scrambled eggs however you do it.
  4. Warm up flour tortillas in the oven, 340° for a minute or 2.
  5. Arrange the pico de gallo, refried beans(warmed in the microwave), shredded cheese, salsa, scrambled eggs, chorizo, and flour tortilla in a board.
