LAYERED PEACH-BLUEBERRY COBBLER

Ingredients
  

  • 2 cups flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 sticks butter
  • 1/2 cup hot water
  • 4 large peaches
  • 1/2 cup sugar
  • 1 tbsp lemon juice
  • 1/4 cup water
  • ½ cup water + 2 tbsp cornstarch
  • 1 1/2 cup fresh blueberries
  • 1 cup sugar
  • 1 tbsp lemon juice

Method
 

  1. In a bowl, combine flour, sugar, baking powder, salt and butter. Mix it all together using your clean hands until the mixture resembles walnut size pieces. Add the water, stir together with a spoon until moistened. Set it aside.
  2. Wash the blueberries with water thoroughly. In a bowl, combine 1/2 cup of sugar, blueberries, and 1 tbsp lemon juice. Stir everything together then set aside.
  3. Peel and slice peaches into wedges. Place in a sauce pan with lemon juice, 1/2 sugar, and 1/4 cup of water. Let that boil. Preheat the oven to 350°.Add the water and cornstarch mixture into peaches. Stir and cook for another 30 seconds.
  4. Layer a little bit of the topping dough into the bottom of the pan. Add some of the peaches
  5. Then the blueberries.
  6. Repeat with the remaining peaches and blueberries.
  7. Then top with the remaining dough. Cover a sheet pan with foil then place the cobbler pan on top. Bake it in the oven until top is golden brown. 45 minutes to an hour.
  8. Cool it down for 5 minutes in the counter before serving.
