Pistachio "Watergate" Salad

Ingredients
  

  • 1 box Jell-O Pistachio pudding mix
  • 20 oz can of crushed pineapple (drain juice but save 1 tbsp)
  • 16 oz cottage cheese
  • 8 oz Cool Whip
  • 1 sm bag of shelled walnuts, divided (optional)
  • 2 1/2 cups mini-marshmallows

Instructions
 

  • Drain the juice of crushed pineapple but save 1 tbsp. In a bowl, stir Pistachio pudding mix and crushed pineapple.
  • Then the cottage cheese.
  • Then the Cool Whip topping.
  • Add the reserved pineapple juice.
  • Stir in half of the walnuts.
  • Then the mini-marshmallows. Cover the bowl and chill in the fridge until ready for serving.
