Pistachio "Watergate" Salad

Ingredients
  

  • 1 box Jell-O Pistachio pudding mix
  • 20 oz can of crushed pineapple (drain juice but save 1 tbsp)
  • 16 oz cottage cheese
  • 8 oz Cool Whip
  • 1 sm bag of shelled walnuts, divided (optional)
  • 2 1/2 cups mini-marshmallows

Method
 

  1. Drain the juice of crushed pineapple but save 1 tbsp. In a bowl, stir Pistachio pudding mix and crushed pineapple.
  2. Then the cottage cheese.
  3. Then the Cool Whip topping.
  4. Add the reserved pineapple juice.
  5. Stir in half of the walnuts.
  6. Then the mini-marshmallows. Cover the bowl and chill in the fridge until ready for serving.
