Assemble the team.
Season the pork with salt, garlic powder & herbs, ground mustard, dried thyme, and chili powder. Mix them all together.
Stir in the flour to coat the meat.
In a cup, mix together water and brown gravy mix. Set aside.
Heat up bacon grease(or oil) in a pan. Brown the pork for 3-4 minutes. Do this in batches if you have a lot of pork.
Place half of the brown gravy mix into the crock-pot. Add the browned pork into the pot. Pour some of the gravy mix into the pan then whisk the bits and juices together. Add the whole thing into the crock-pot. (Refer to the video) Then pour the remaining gravy mixture from the cup over the pork.
Cover the crock-pot. Set it in low and cook away. I started this at 10am
4 hours into cooking, add the cubed potatoes. Continue cooking until potates are tender, about 3 more hours or so, or about dinner time.
