Spinach-Artichoke Hearts & Bacon Quiche W/ Feta And Mozzarella Cheese

Ingredients
  

  • 6 eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 shredded mozzarella cheese (divided) (divided)
  • 1/2 block feta cheese (divided)
  • 1 sm can/jar of artichoke hearts (discard the liquid)
  • 1/2 bag fresh spinach
  • 3-4 pcs bacon (cook then chopped)
  • cooking spray for the pan
  • salt & pepper to season

Method
 

  1. Spray quiche or pie pan with cooking spray then set aside. 
    Cook the bacon. Chop and set aside. Reserve a little bit of bacon fat. Use the same pan to sauté artichoke hearts and spinach. Season with a sprinkle of salt & pepper. Sauté until the spinach wilts. Take the pan out of the heat and let it cool down. 
  2. Preheat the oven to 350°
    In a bowl, whisk eggs. Add heavy cream then whisk again. Add sour cream and half of the shredded mozzarella cheese. Mix everything together. 
  3. Add and stir in half of the crumbled feta cheese. Then the chopped cooked bacon. Stir in the sautéed spinach and artichoke hearts. Transfer the whole thing into the quiche pan. Add the remaining feta cheese and mozzarella cheese on top. 
  4. Bake it in the oven for 45 minutes. Let it cool for 5-10 minutes before serving.
