Cajun Spiced Fried Chicken

Ingredients
  

  • 6-8 pcs chicken
  • 2 1/2 cups flour
  • oil for frying
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 1 tsp cayenne pepper
  • sprinkle of salt and pepper

Instructions
 

  • In a small bowl, combine chili powder, cumin, garlic powder, cayenne pepper, dried basil, dried oregano, salt and pepper. Mix all of that together and set aside. Place your chicken pieces in a marinating bowl. Pour half of the cajun seasoning to coat the chicken pieces. Cover the bowl, store in the fridge to marinate for 30 minutes or an hour. Or longer, it’s up to you.
  • After the marinating process, prepare the oil and the chicken. Heat up oil in a deep frying pan. Pour flour in a large ziploc bag. Add the remaining cajun seasoning, and mix everything together.
  • Place 2 pieces of chicken to coat with the flour mixture. coat the chicken evenly, shake off excess flour then carefully place in the hot oil, skin-side down first. Repeat the process with 2 more pieces of chicken. Do this in batches coz you don’t want to overcrowd the ziploc bag and the pan.
  • Once you have about 4 or 5 pieces of chicken in the pan, cover and cook for 10-12 minutes on each side. Covering the pan will cook the meat and skin evenly and will keep the skin crispy as well. Flip the chicken to cook the other side. This time, cover the pan but with a little bit of opening. Drain the excess grease in a strainer with bowl underneath.

Serve with either mashed potatoes or cheesy-garlic bread, and corn on the side, either boiled in a cob or grilled with parmesan cheese or just in kernels form.
