Air-Fryer Egg-Bacon-Cheese Cups

I found these Air-Fryer Egg-Bacon-Cheese Cups in a 2019 folder. What the heck? I remember they were easy to make and delish but I guess I never got the chance to write about them. Well, better late than never, right? So if you’ve got an Air-Fryer lying around(who doesn’t at this point?), make these for breakfast or a weekend brunch.

Air-Fryer Egg-Bacon-Cheese Cups

Equipment

  • 1 Air-Fryer
  • 4 ramekin cups

Ingredients
  

  • 5 eggs
  • 1/2 cup milk
  • 1 sm tomato chopped
  • 2-3 pcs bacon cooked, chopped
  • 3/4 cup shredded cheddar cheese
  • salt & pepper
  • oil spray (or 1 tbsp vegetable oil) to grease the ramekins

Instructions
 

  • Cook the bacon. Chop into small pieces. Chop the tomatoes as well
  • Beat/Whisk the eggs with milk. Season with salt and pepper.
  • Grease the ramekins with oil spray or vegetable oil. Pour equal amounts of the whisked eggs into the ramekins. Top with the cooked bacon.
  • Then the chopped tomatoes. If you have picky kids who don't like tomatoes, skip their cups.
  • Then the shredded cheddar cheese.
  • Place the ramekins into the Air-Fryer bowl. Set it to 355 to cook for 20 minutes.
  • Here you go. Carefully transfer into a serving platter.

VOILA, Air-Fryer Egg-Bacon-Cheese Cups.

You can serve as is in the cups or run a butterknife along the edges and transfer into a plate. Hence the oil spray before hand.

Enjoy for breakfast anytime or a weekend brunch. Instead of bacon, you can use up leftover ham from the Easter dinner too.
