Ube Pancakes

It was Ube Pancakes day last Saturday. It sure made my purple loving daughter’s heart happy. And who doesn’t love ANYTHING Ube at this point? Ube Crinkles, Ube Ice cream Cake, Ube cake, Ube drop sugar cookies, and now Ube pancakes.

I got the Ube flavoring extract from Amazon. Trust me when I say a teaspoon goes a long way.

Ube Pancakes

Ingredients
  

  • 2 1/2 cup flour
  • 3 tbsp sugar
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp Ube flavoring extract
  • butter
  • maple syrup (or pancake syrup)

Instructions
 

  • Whisk together flour, sugar, baking powder, baking soda, and salt.
  • Beat 1 egg in a measuring cup or bowl. Beat in milk and vegetable oil.
  • Add the wet mixture to the dry mixture.
  • Whisk gently but keep it lumpy.
  • Add the Ube extract.
  • Stir it gently.
  • PURPLE POWER. Let the batter rest for 10 minutes.
  • Melt butter in a electric griddle or non-stick pan, on medium heat. Ladle about 3/4 cup batter into the pan for each pancake. 4-6 at a time. Cook for 2-3 minutes on first side.
  • Cook for 2-3 minutes on first side or until it bubbles up.
  • Flip the pancakes to cook the other side for another minute or so. Place them in the platter. Wrap the plate with foil to keep them warm while you cook the rest.

A little bit of butter and not so little drizzle of maple syrup on top.

Ah, soft and fluffy Ube Pancakes.
