Pull-Apart Ranch Chicken Salad Sliders

My TikTok FYP at one point was filled with recipes of these Pull-Apart Ranch Chicken Salad Sliders. So I was like OK OK, I’ll make ’em. Geez. Well thank goodness I finally made them because they’re really good and was a hit with the family. There’s a Ham variation of this recipe too and I’m sure you’ve seen those videos as well. I haven’t made the ham version yet but I’m planning on doing it soon. Let’s stick to the chicken for now.

Few of the recipes I’ve seen used Rotisserie Chicken(from a grocery store that sells hot food) and some have used boiled chicken breasts then shredded. I made mine by roasting 2 large leg quarters seasoned with salt & pepper and chili-lime seasoning. Use whatever spice you like on your chicken. Or boil some boneless chicken breasts or buy a Rotisserie Chicken. Either way, the sliders will be good.

Pull-Apart Ranch Chicken Salad Sliders

Ingredients
  

  • 2 large chicken leg quarters (READ NOTES for options)
  • salt & pepper (use all throughout)
  • 2 tbsp chili-lime seasoning
  • 3 pcs green onions(scallion) chopped
  • 3-5 pcs bacon (browned then chopped)
  • 1/2 cup Ranch dressing
  • 1 cup mayonnaise
  • sprinkle of dried dill
  • sprinkle of chili powder
  • 2 cups shredded cheese (divided, cheddar or any kind)
  • 5 slices of American cheddar cheese (use any kind, GOUDA is really good)
  • 1/2 stick butter melted
  • 2 tsp garlic powder (divided)
  • 1 tsp Italian dried seasoning
  • oil spray for the pan
  • 12-pack Hawaiian dinner rolls

Instructions
 

  • Preheat the oven to 355°. Season the leg quarters with salt & pepper and chili-lime seasoning. Place the chicken in a foil-lined pan. Roast in the preheated oven for 1 hour or until fully cooked. Once roasted, let the chicken cool down completely.
  • Once the chicken quarters are cooled down, peel the skin off. DO NOT USE the skin. Set that side for you to eat(if you like them) or throw 'em away. Pull the meat off of the bone. Shred/Chop the chicken meat.
  • Combine the chicken with ranch dressing, mayonnaise, green onions, 1cup of shredded cheese & bacon. Stir everything. Season with salt & pepper, 1tsp of garlic powder, dried dill, and chili powder. Stir everything together.
  • Cover the bowl and let it sit in the fridge to cool for 2-3 hours(or until ready to assemble the sliders)
  • Spray the bottom of the casserole pan. Melt butter in the microwave.
  • Stir in the last tsp of of garlic powder and dried Italian seasoning. The butter mixture will be divided 3 times.
  • Slice the dinner rolls evenly in the middle(refer to the recipe video) with a bread knife.
  • Place bottom part of the rolls into the casserole pan.
  • Brush lightly with the melted butter mixture.
  • Sprinkle the last cup of shredded cheese, then the ranch-bacon chicken salad, then the slice of cheese(NOTE on how I cut each cheese slice in half). Brush the inside of the top part of the dinner rolls with the melted butter mixture.
  • Place the top part of the dinner rolls on top of the pan. Brush the top with the remaining melted butter mixture.
  • Cover the whole thing with foil. Bake it in the oven in 350° for 25 minutes.
  • Let it cool for 10-15 minutes.
  • Run a knife around and on each slits to make it easier to pull-apart each slider. Enjoy!

Notes
