Simple Dinner Idea: Baked Nachos

Simple dinner idea using flour tortillas which can be even made easier by grabbing a couple of bags of Dorito’s Nacho Chips. Either way this will be a huge hit with your family for a Weekend get together, easy to make dinner during the week, or parties.

I mentioned flour tortillas. My daughter calls it homemade nachos which she loves. She loves Dorito’s Nachos for its cheesiness but one day I fried up flour tortillas and served them with con queso dip and the combo has turned into a favorite snack. I decided to take it up a notch and made Baked Nachos one day.

Simple Dinner Idea: Baked Nachos

Ingredients

  • 6-8 large flour tortillas
  • oil frying
  • fries seasoning (geneorus sprinkle, or just salt)
  • 1 lb ground beef
  • 2-3 tbsp taco seasonings
  • 1 can refried beans
  • 1 jar Con Queso dip
  • 1 cup shredded cheddar cheese
  • 1 cup chopped tomatoes
  • 1 cup chopped lettuce
  • 1/2 cup chopped scallions(green onions)
  • avocado (optional)
  • sour cream for topping

Method

  1. Cut the flour tortillas into small triangles. (OPTIONAL: Use a couple of bags of Dorito's Nachos and skip this and the frying steps)
  2. Heat up oil. Fry up the flour tortialls until golden brown
  3. Coat the fried flour tortillas with French Fries seasoning(or salt). Set aside.
  4. In a skillet, brown the ground beef. Discard the grease. Season with Taco seasonings. PS: I ran out so I used Fajitas seasoning(ultimately the same 😊)
  5. Preheat the oven to 350°. Lay the fried flour tortilla chips into a sheet pan.
  6. Spread the ground beef mixture on top.
  7. Put the refried beans in a bowl. Warm up for 2 minutes or so to give it a spreadable consistency. Spread evenly on top of the ground beef mixture.
  8. Stir the Con Queso dip before spreading evenly on top of the refreid beans.
  9. Top the whole thing with shredded cheddar cheese.
  10. Bake it in the oven for 15-20 minutes.
  11. Top with chopped tomates. lettuce, and scallions (green onions). VOILA!

SUCH A HIT, I tell You!

Top with a dollop of sour cream.

Then with avocado slices OR Guacamole, if you have extra 2 minutes to make it.
