Pumpkin-Raisins Cinnamon Rolls With Cinnabon-Like Frosting

[ARCHIVES: OCTOBER 2014] I havenโ€™t made cinnamon rolls in a while so I was craving some so badly especially now that itโ€™s Fall season. My original plan was to make cinnamon rolls with raisins but while the dough was kneading in the mixer I remember the cans of pumpkin in the cupboard. For about 3 minutes I debated whether I should or shouldnโ€™t add pumpkin in the dough. That would mean adding more flour so it wouldnโ€™t be gooey. I figured since itโ€™s Fall and itโ€™s pumpkin season, why not? Itโ€™s one of the best decisions of my life. The verdict was: Itโ€™s the best cinnamon rolls youโ€™ve ever made.

Seriously, beyond the flavors of cinnamon, pumpkin, and raisins plus the Cinnabon-like frosting, the rolls were baked perfectly. Try it.

Pumpkin-Raisins Cinnamon Rolls With Cinnabon-Like Frosting

Ingredients
  

  • 2 cups lukewarm water

    6 cups of flour

    1/4 cup vegetable oil

    3 tbsp of sugar

    3/4 cup of pumpkin puree

    extra flour

    Pam Spray

    1 ยฝ stick of butter

    3 sm boxes of raisins

    sugar and powdered cinnamon combo

    1 stick of butter

    1 3/4 of confectionery sugar

    1 brick of cream cheese

    2 tbsp of vanilla

  • 1 tbsp sugar
  • 1 packet dry yeast
  • 6 cups flour
  • 3 tbsp sugar
  • 3/4 cup pumpkin puree
  • extra flour
  • Pam spray
  • 1 1/2 stick butter
  • 3 sm boxes of raisins
  • sugar and powdered cinnamon combo generous sprinkling
FROSTING
  • 1 stick butter softened
  • 1 brick cream cheese softened
  • 2 cups confectionery sugar
  • 2 tbsp vanilla
  • pinch of salt

Method
 

  1. In a bowl, sprinkle yeast and 1 tbsp of sugar with the lukewarm water. Let that sit for 5 minutes or until bubbly. (old photo)
  2. In the mixing bowl, combine flour, 3 tbsp of sugar and vegetable oil. Once the yeast mixture is ready, pour it onto the flour mixture. Mix at low speed using the hook attachment for about 10 minutes(old photo). Add the pumpkin puree and continue to mix in medium speed until well incorporated. The dough should be stretchy and soft.
  3. Sprinkle flour in a flat surface. Knead the dough for 5 minutes with your hand. Lightly grease a bowl with Pam spray, drop the ball of dough in it then cover with a damp towel. Let the dough rise for 2 hours. Punch it after 2 hours, cover then let it rise for another 30 minutes.
  4. Combine sugar and powdered cinnamon in a container or ziploc, set that aside. Sprinkle flour in the counter space. Cut the dough in half. Roll the 1st half of the dough into a wide rectangle. Sprinkle some of the sugar & cinnamon combo. Add the dots of butter and raisins.
  5. Roll the dough as tightly as you could then cut the rolls.
  6. Lightly spray the bottom of a pan Pam. Place the rolls into the pan. Cover with clean kitchen cloth and let the whole thing rest for 15 minutes.
  7. Repeat the process for the other half of the dough.
  8. Bake the rolls in the preheated oven of 355ยฐ, for 25 minutes or until golden brown. Once baked, take โ€˜em out of the oven and let it cool for 5 minutes.
  9. FROSTING: Mix the butter, cream cheese, powdered sugar, salt, and vanilla until it reaches spreadable consistency.
  10. Frost the rolls.

Serve with a cup of coffee or tea, whichever hot beverage you prefer. Isnโ€™t this perfectly cozy for Fall season? This is a good idea as Christmas gifts too by the way. For your neighbors, mailman, or whomever you want to give a gift of food this coming Holidays.

That frosting is really good if Is ay so myself. It might not be exactly like Cinnabonโ€™s frosting but itโ€™s pretty close and Iโ€™m quite proud of myself for that, HAH!
