Hazelnut Thumbprint Cookies
Thumbprint cookies are similar to the Hershey Kisses Blossom Cookies except this time around I used Hazelnut and did not chill the dough before baking. I also used baking soda instead of baking powder per the original recipe from If You Give A Blond A Kitchen which also used peanut butter but I’ve skipped it this time. I just wanted a simple Hazelnut Thumbprint Cookies for my first day of holiday baking and I’m happy to say the family approves.
Hazelnut Thumbprint Cookies
Ingredients
- 1 3/4 cup flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup brown sugar
- 1/2 cup granulates sugar
- 1 stick butter
- 1 tsp vanilla extract
- 1 egg
- 1 cup hazelnut spread (Nutella)
Instructions
- In a bowl, mix together flour, salt, and baking soda. Set aside. In a mixing bowl, beat together butter, brown sugar, and granulated sugar using the paddle attachment until well-combined and fluffy. Add the egg and vanilla extract then gradually add the flour mixture. Preheat the oven to 375°.Scoop a spoonful of dough to form a bowl or use a cookie scooper if you have one. Place in a cookie sheet. Repeat. Bake 'em in the oven for 10-12 minutes.
- Once baked, take 'em out and immediately push thumb in the middle of the cookie. Let them cool in a rack while you bake the next batch. Once cooled, spoon some hazelnut into the thumbprint indentation.
