Delicious Peach-Apple Cobbler

Ingredients
  

  • 2 cups flour
  • 1 cup sugar
  • 1 tsp salt
  • 2 sticks butter
  • 1/2 cup hot water
  • 3 large peaches
  • 3 red apples (only 2 in the picture but I added 1 more)
  • 1 cup sugar
  • 1 tbsp lemon juice
  • 1/2 cup water
  • 1/2 cup water + 2 tbsp cornstarch

Equipment

Method
 

  1. In a bowl, combine flour, sugar, baking powder, salt and butter. Mix it all together using your clean hands until the mixture resembles walnut size pieces. Add the water, stir together with a spoon until moistened. Set it aside.
  2. Peel and slice peaches and apples into bite size cubes. Place in a sauce pan with lemon juice, sugar, and 1/2 cup of water. Let that boil.
  3. Preheat the oven to 350°.
  4. Add the water and cornstarch mixture into the boiling fruit pan. Stir and cook for another 30 seconds.
  5. Carefully pour the whole thing into a greased baking dish.
  6. Spoon, one at a time, the batter on top of the fruit mixture.
  7. Bake it in the oven until top is golden brown. Cool it down a bit in the counter before serving

Notes

*Place a sheet of foil in the bottom rack of the oven. This will catch whatever excess topping that will ooze out of the pan while cooking. Easy cleaning for your oven.
