Delicious Peach-Apple Cobbler

What do you do when you have peaches and apples? Make peach-apple cobbler, of course. That’s exactly what I did 2 nights ago. Peach Cobbler is a family’s favorite but I figured I’d stretch my imagination by combining the peaches with apples. Peach-Apple combo is heaven, especially when you add a scoop of vanilla ice cream on top. Ah, forgeddhaboutit. Warm fruit cobbler with melting vanilla ice cream on top. You’ll be forgiven if you forget your children’s names for that moment.

Delicious Peach-Apple Cobbler

  • 3 large peaches3 red apples (only 2 in the picture but I added 1 more)1 cup sugar1 tbsp lemon juice1 cup water1/2 cup water + 2 tbsp cornstarch

  • 2 cups flour
  • 1 cup sugar
  • 1 tsp salt
  • 2 sticks butter
  • 1/2 cup hot water
  • 3 large peaches
  • 3 red apples (only 2 in the picture but I added 1 more)
  • 1 cup sugar
  • 1 tbsp lemon juice
  • 1/2 cup water
  • 1/2 cup water + 2 tbsp cornstarch

  • In a bowl, combine flour, sugar, baking powder, salt and butter. Mix it all together using your clean hands until the mixture resembles walnut size pieces. Add the water, stir together with a spoon until moistened. Set it aside.
  • Peel and slice peaches and apples into bite size cubes. Place in a sauce pan with lemon juice, sugar, and 1/2 cup of water. Let that boil.
  • Preheat the oven to 350°.
  • Add the water and cornstarch mixture into the boiling fruit pan. Stir and cook for another 30 seconds.
  • Carefully pour the whole thing into a greased baking dish.
  • Spoon, one at a time, the batter on top of the fruit mixture.
  • Bake it in the oven until top is golden brown. Cool it down a bit in the counter before serving

*Place a sheet of foil in the bottom rack of the oven. This will catch whatever excess topping that will ooze out of the pan while cooking. Easy cleaning for your oven.

Serve while it’s still warm with a scoop of vanilla ice cream on top.

Yummy after dinner dessert with a cup of coffee. Seriously, this is an A-Lister.
