Dutch Baby Pancakes

Ingredients
  

  • 3 eggs
  • 3/4 cup milk
  • 3/4 cup flour
  • a pinch of salt
  • 4 tbsp sugar
  • 1 tsp vanilla
  • 1/2 stick butter
  • generous sprinkle of confectioners sugar

Method
 

  1. Preheat the oven to 400°. Divide the butter into 2 cast iron skillets or non-stick pans. Stick 'em into the oven to melt . Watch carefully in order not to burn 'em. In a blender, combine eggs, flour, milk, salt, sugar, and vanilla. Blend together until foamy. 
  2. Pour the batter into the skillets. 
  3. Bake in the oven for 25 minutes. 
  4. Sprinkle with confectioners sugar. Serve immediately with either syrup or fruit compote.
