MERINGUE COOKIES
I love meringue cookies. They’re one of my childhood favorites. It’s actually easy to make and you only need 3 ingredients. I don’t make meringue cookies that often though coz of my piping skills, or lack thereof. That’s the hardest part for me. But a few weeks ago I have plenty of reserved egg whites from making chocolate chips ice cream and blueberry ice cream so I figured it’s that time to make meringue cookies again. It was also a good activity for my daughter who wants to bake and bake and bake during her summer vacation. Thank you Lord for A/C. I figured making meringue cookies will be perfect for our Arts & Crafts day. Hey, in my world, baking is artistic!
Meringue Cookies
Ingredients
- 7 egg whites
- 2 cups granulated sugar
- 1 tsp cream of tartar
Instructions
- Preheat the oven to 175°. Beat the egg whites until they form soft peaks.
- Add the cream of tartar and gradually add the sugar as it continues to beat until they turn glossy and have formed stiff peaks.
- Line a baking sheet with parchment paper. Fill a piping bag then pipe ‘em into the lined pan in the size of meringues of your choice.
- Stick it in the oven to bake for an hour. After that time, turn the oven off, leave the meringues in the oven for an hour with the door slightly ajar.

They sure didn’t last long….. I must say, I was happy with my piping skills with this batch!
Eat as is or serve with either yogurt or ice cream. With fresh fruits too if you want.
