Meatloaf, Anyone?
The husband and I just finished binge-watching 5 seasons of Breaking Bad. I think it was my 5th time to watch the show. Scott only caught a few episodes here and there. Before our vacation early this past month he decided to start watching it so he downloaded season 1 on his tablet to take with us to watch during the night. After our vacation we’d watch 2-3 episodes at night and we finally finished the full series last night. Now I get to watch the El Camino: A Breaking Bad Movie again because I told him that would be the next to watch to find out what happened to Jesse. Then, we’d watch the spinoff Better Call Saul, which by the way I’ve already seen as well and just waiting for the final season. I don’t mind watching these series again with the husband this time around. I love the shows and it’s nice to have something to unwind with at the end of the day with the Hubby.
How is this remotely related to meatloaf? Well, in season 4 of Breaking Bad, there were a couple of episodes where the character Mike and Jesse were at a diner. Mike was eating big fat slices of meatloaf with corn in the cob. While watching the scene I thought quietly, “dang that meatloaf looks good. I think I’ll make it sometime.” After thinking that to myself, Scott turned to me and said, “the meatloaf looks good, when was the last time you made one?” 😂😅 We’ve been married for 24 years by the way. We pretty much have the same quiet thoughts it’s scary.
Story short, I made meatloaf 2 weeks ago. I served it with mashed potatoes and salad. It was purely satisfying and sooooo good.
Meatloaf, Anyone?
Ingredients
- 3-4 lbs ground beef
- 1/2 pound hot sausage (optional)
- 1 sm onion chopped
- 2 eggs
- 1 1/2 cup breadcrumbs
- generous sprinkle of garlic powder
- sprinkle of Italian seasoning
- 1 tbsp Worcestershire sauce
- sprinkle of salt and pepper
- 1 cup ketchup
Instructions
- Preheat the oven to 355°, In a large mixing bowl, combine the beef, hot sausage(optional) eggs and chopped onions.
- Add the bread crumbs, garlic powder, Italian seasoning, Worcestershire sauce, salt, and pepper
- Mix everything together with your clean hands.
- Transfer in a loaf pan. Pack it real tight.
- Brush 1/2 cup of ketchup on top. Save the remaining 1/2 cup for later.
- Bake it in the oven for 45 minutes. Take the pan out then brush the remaining ketchup on top. Place it back into the oven to cook for 15 more minutes.
Carefully transfer the meatloaf in a platter. There will be grease so be careful in lifting it up with the help of 2 spatulas.
NOTE: I put too much onions in my meatloaf. I didn’t mean to use all of the chopped onion from a large one. So, just pick the smallest onion you have. Or, just chop 1/2 of a large onion. Or, YOLO, use all of it 😅🧅.
