Lemon Beef Spinach & Mushrooms Stir-Fry
I had a pack of organic Baby Spinach that was supposed to be for our salad lunch but the leaves were starting to wilt so I had to find a way to use it quickly. Beef and Spinach Stir-Fry it is. The husband then asked to add mushrooms too so here it is.
Serve with rice and we are good to go. Baby Spinach have been rescued to a completely different dish that was intended for and loved every bite of it. I hope you like it too.
Lemon Beef Spinach & Mushrooms Stir-Fry
Ingredients
- 3 pcs sm sirloin steak sliced thinly
- 1 cup soy sauce
- 1 large lemon
- 1 tsp black pepper
- 1/2 cup water
- 2-3 cloves garlic chopped
- 1 medium onion sliced
- 1 pack baby spinach
- 4-5 large button mushroom sliced
- oil for cooking
Instructions
- In a measuring cup, combine soy sauce, water, chopped garlic, lemon juice, and black pepper. Put the sliced beef in a ziploc bag or a bowl(with cover). Pour the marinade all over the beef. Marinate for 2-3 hours before cooking.
- Heat up oil in a wok/pan. Sauté the beef with the marinade. Stir then cover to tenderize the beef. About 10-12 minutes, stirring occasionally.
- Stir in the sliced onions.
- Cover to continue cooking and tenderizing the meat. About 5 minutes or so.
- Stir in the spinach. The leaves will wilt fast.
- Stir in the sliced mushrooms. This will take about 2 minutes or so.
- VOILA!
Transfer in a serving bowl.
Soooo good with rice.
