Our Food On Christmas Eve & Christmas Day
If there’s one thing our family would do during the holiday season is to eat and eat well. We’re very conscious of our groceries all throughout the year and always looking out for deals and sales but on holidays, we tend to splurge a bit. The huge part of this blog is food & cooking so I’m sharing what we’ve enjoyed gastronomically on Christmas Eve and Christmas Day. Stick around, scroll & drool if you must. Christmas Eve: We thought early on that we were just going to clean out our fridge by eating leftovers. As the days went by and getting closer to dinner I suddenly had cravings for Chinese food. I asked my Husband about it and he said he had been thinking about it as well. Our brains were syncing (as it usually does) as the day was progressesing apparently. On some previous Christmas Eve dinners, sometimes we cooked and sometimes we ordered Take-Out. This year we had Chinese food take-out.
Sesame Chicken(my own recipe right here), Black Pepper Chicken, Boneless BBQ Pork, Beef and Veggies Chow Mein, and Cabbage Egg Rolls.
For dessert, we had Pig Pickin’ Cake given by a friend from Church. To non-Southerners, itβs a layered yellow cake with crushed pineapple and mandarin oranges & whipped cream. Our friend Ms. Alice makes this cake for our Fellowship get-togethers and it’s become one of my favorites. πππ
CHRISTMAS DAY: On previous years I’ve made Cinnamon Rolls for us to eat after opening the gifts. For 2024, I decided to make Breakfast Pizza which I actually haven’t made in a while. We ate the whole pan up for sure. Opening gifts is exhausting and we obvioussly need nourishment after that. πβΊοΈ
A few hours later for lunch we had the appetizers. Pita Chips, crackers, Humus dip, cheese, and pepperoni. Look, we could make our own appetizers like Smoked βShotgun Shells,β Ricotta & Tomato Crostini, Bacon-Wrapped Smokies, or Jalapeno Poppers but sometimes we like to take it easy and just buy an appetizer platter with extra crackers and humus. Nothing wrong with that at all.
DINNER TIME: Prime Rib, Potatoes Au Gratin, and Roasted Veggies plus Filipino Fruit Salad(with raisins) and Flan for dessert.
Standing Prime Rib Roast was the star. I’ve cooked it the oven way in 2016, 2019, and 2020, For 2023 and 2024 the husband smoked it in the Pit Boss Pro Pellet Grill.
