Grilled Italian Chicken Kebabs

Grilling doesn’t need to be complicated. This Grilled Italian Chicken Kebabs for example. Boneless chicken breasts, Italian dressing, sweet peppers, and onions are optional but highly recommended of course. I also wrapped some of the chicken slices with bacon. These chicken kebabs went well with the Grilled Pineapple with Tajin seasoning + grilled Brie cheese. Main entree and sides cooked in one equipment. So get those charcoal or gas grills ready and start grilling.

Use any kind of Italian dressing you want. I got this bottle from Aldi. Use metal skewers if you have them but if you don’t, the bamboo skewers are fine. Just soak them in warm water for 30minutes before skewering the chicken. Also, it’s good to sprinkle the kebabs while grilling with a Chili-Lime-Salt seasoning.

Grilled Italian Chicken Kebabs

Equipment

  • charcoal grill
  • metal skewers

Ingredients
  

  • 3 boneless chicken breasts
  • 1 1/2 cup Italian dressing
  • generous sprinkle of salt & pepper
  • 1 yellow sweet pepper sliced in chunks
  • 1 onion sliced in chunks
  • a few pieces of bacon
  • chili-lime-salt spice seasoning

Instructions
 

  • Sliced the boneless chicken breast in chicken tender sizes.
  • Generously season the slices with salt and pepper.
  • Gently pound or tenderize the slices.
  • In a marinating bowl, combine the sliced chicken breasts and Italian dressing. Coat evenly, cover the bowl then chill in the fridge for 3-4 hours.
  • Wrap some of the slices with bacon. I didn't do it to every slice because I was saving the bacon for breakfast(HAH).
  • Skewer with metal skewers - chicken, sweet pepper, chicken, onion, then another slice of chicken.
  • Grill and grill. Sprinkle a Lime-Chili-Salt spice into the chicken while grilling. This enhances the flavor. My husband saved 2 skewers for my daughter because she doesn't like spicy things.
