Meatless Dinner: Baked Spinach-Ricotta Raviolli

At least one night a week I try to make Meatless Dinners. And it doesn’t always have to be just vegetables. Meatless pasta dishes are easy, simple, quick, and delicious! Check out Baked Potato Gnocchi W/ Spinach & Ricotta Cheese.

Now here’s the Baked Spinach-Ricotta Raviolli version.

Meatless Dinner: Baked Spinach-Ricotta Raviolli

Ingredients
  

  • 1 pkg 8.8oz dried spinach-ricotta raviolli
  • 1 jar Alfredo sauce
  • 1 cup Ricotta cheese
  • 1 cup shredded cheddar cheese (optional, shredded Mozzarella cheese)
  • water for boiling pasta
  • sprinkle of salt & pepper
  • sprinkle of garlic powder
  • sprinkle of dried Italian herbs

Instructions
 

  • Boil water for the raviolli pasta. Add the raviolli.
  • Cook until al dente.
  • Drain the water then add the Alfredo sauce. Season with garlic powder, dried Italian herbs, salt & pepper. Stir everything together.
  • Preheat the oven to 355°. Transfer the pasta into a baking dish. Evenly spread Ricotta cheese on top.
  • Top evenly with shredded cheese. Bake it in the oven for 15minutes.
  • Let it cool for 5minutes before serving.

Serve with bread if you have any. Sprinkle grated Parmesan cheese. Easy and simple meatless dinner.
