Homemade Chili-Parmesan French Fries

In order to achieve the best homemade french fries you need to do the double-fry technique. I’ve read about this technique before and even watched cooking shows mentioning it but I’ve never really done it in all the years that I’ve made fries at home. Until tonight when I made these chili-parmesan french fries that are just sooo good. I couldn’t stop eating the 1st batch that I made for testing. While I was preparing the table my husband kept eating the fries from the serving bowl too so I told him to stop to which he asked, “isn’t that what we’re supposed to do with them?” Well, he was right.

Anyhoooo without further adieu, here’s how to make these double-fried chili-parmesan French fries.

Homemade Chili-Parmesan French Fries

Ingredients
  

  • 5-6 large white potatoes(large or medium)
  • water to soak the cut potatoes
  • oil for frying
  • sprinkles of seasoned salt
  • sprinkles of chili powder
  • sprinkles of grated parmesan cheese

Instructions
 

  • Wash the potatoes thoroughly. Cut them in thin strips. Soak them in cold water as you cut. First Fry: Heat up oil, low-medium, in a pot. In small batches, fry up some of the cut potatoes. 1st fry takes 4 minutes. Carefully take out of the pot. The potatoes should be soft and limp. Drain the excess oil in a colander or paper-towel lined plate. Repeat this process for the remaining cut potatoes.
  • Second Fry: Turn up the heat a little bit more. Again, in small batches, fry up the fries until golden brown. Drain the fries in another paper-towel lined plate.

Cut a regular white paper in half. Make a cone for each half. Staple it to secure the cone. Put some fries inside, sprinkle more parmesan cheese and place in a small cup to serve.

Or lay it on the plate. The presentation is up to you. I served these yummy chili-parmesan french fries as part of our fish and chips dinner alongside pasta salad. I’ll post the recipe to the latter some other time. Enjoy the fries!
