Beef & Sweet Peppers Fajita Rice Bowl

[FROM THE ARCHIVES MARCH 2015] When you don’t feel like eating your fajitas texanas the usual way with Flour tortillas, here’s another option, Make it a rice bowl. Hey, I always have rice ready so this was easy and quick for me. Plan it for a day’s dinner with rice in mind and Enjoy!

Beef & Sweet Peppers Fajita Rice Bowl

Ingredients
  

  • 2 pcs sirloin steak sliced in strips
  • 4 tbsp oil
  • 1 medium onion sliced
  • 2 tomatoes sliced
  • 2-3 pcs sweet peppers sliced
  • 1 packet taco seasoning mix
  • 1/2 refried beans
  • cooked rice
  • green salsa
  • sour cream
  • shredded cheddar cheese

Instructions
 

  • Heat up 2 tbsp oil in a pan. Saute onions and tomatoes for a couple of minutes. Add the sliced sweet peppers, season with a half packet of the taco seasoning. Stir everything together and cook until peppers are soft yet still crunchy. Set it aside on a platter.
  • Using the same pan, add the remaining 2 tbsp of oil to saute the beef strips. Season with the remaining taco seasoning.
  • Stir and cook until beef strips are tender.

Assemble the bowl with a cup or so of cooked rice first then the cooked beef strips, refried beans, a little bit of salsa, and the sauteed sweet peppers & onions mix. Top with sour cream and shredded cheddar cheese. VOILA!
