Easy Does It With Pimiento Cheese Sandwich

Something quick, something easy, and something delicious. That is the Pimiento Cheese spread. Make it ahead for next day’s lunch or have it handy for a snack. Once you eat a sandwich you’d definitely want another so double the ingredients to have more.

By the way, I only used 1 block of cheese for this recipe but it would be better to use 2 blocks. Also, grated cheese is preferable. A bag of shredded cheese may be convenient but freshly grated cheese is more flavorful.

Pimiento Cheese Sandwich


  • 2 blocks sharp cheddar cheese (grated)
  • 1/2 block softened cream cheese
  • 1 cup mayonnaise
  • 1 sm jar pimiento cheese (drain the liquid)
  • sprinkle of garlic powder
  • salt & pepper to taste
  • slices of bread


  • In a bowl, mix together the grated cheese, mayonnaise, cream cheese, garlic powder, salt & pepper. Stir in the pimientos(drain the liquid),
  • Generously spread on bread slices. Slice the sandwiches in half. Put the remaining spread in a container, cover, and store in the fridge.

Serve with fresh fruit and/or chips on the side and you’ve got a satisfying lunch or snack.
