Grilled Greek Chicken Breast In Brioche Buns

For this Grilled Greek Chicken Breast Sandwich, I highly recommend Brioche buns. It’s such a simple sandwich made scrumptious by marinating the slices of boneless chicken breast in a salad dressing vinaigrette. I love Ken’s Simply Vinaigrette Greek. Add lettuce, tomato, and Gouda cheese, OH MY!

Also, this will be up to you but I suggest you should, lightly butter the buns then grill ’em up for a few seconds. Slightly toasting the Brioche buns just adds another level of yumminess to these sandwiches. Hubby toasted them up just a tad longer but they were still DELICIOUS!

Grilled Greek Chicken Breast In Brioche Buns

Equipment

  • grill

Ingredients
  

  • 2-3 slices of boneless chicken breasts (cut in half and pounded)
  • brioche buns
  • butter
  • mayonnaise
  • lettuce
  • tomatoes
  • 1 cup Ken's Simply Vinaigrette Greek salad dressing

Instructions
 

  • Slice the boneless chicken breast in half, lengthwise. Pound each halves both sides with a meat mallet. Repeat with the other chicken breast. Place in a marinating bowl with the Ken's Simply Vinaigrette Greek salad dressing. Cover and marinate in the fridge overnight.
  • Lightly butter the Brioche buns.
  • Grill the marinated chicken breasts, 6-8minutes on each side.
  • Lightly toast the buns in the grill for 2-3 seconds.
  • Assemble the gouda cheese, lettuce, and tomatoes.
  • Here are the grilled chicken breasts.
  • Lightly spread mayonnaise on each bun. Assemble the grilled chicken breast, cheese, lettuce and tomato.

Cut in half or not, it’s up to you. Served with a side of coleslaw.
