Chicken Salad In Ciabatta Bread

This Chicken Salad sandwich is similar to the Pull-Apart Ranch Chicken Salad Sliders except instead of dinner rolls it’s on Ciabatta Bread. Also, I didn’t roast the chicken. I simply boiled boneless chicken breasts which you could absolutely do for the pull-apart version as well. Pretty much a full circle thing in this recipe.

A very simple sandwich dish, perfect for lunch, brunch, or parties/potlucks/bbq get togethers in the coming weeks now that Summer vacation has finally arrived.

Chicken Salad In Ciabatta Bread

Ingredients
  

  • 3 boneless chicken breasts
  • 3-5 pcs bacon (browned then chopped)
  • 1/2 cup ranch dressing
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 2-3 strings scallion (chopped
  • sprinkle of salt & pepper
  • sprinkle garlic powder
  • sprinkle of paprika
  • sprinkle of dried Italian herbs
  • 6-8 pcs Smoked Gouda cheese slices (or any cheese you like)
  • water for boiling the chicken

Method
 

  1. Boil the boneless chicken breasts. Chopped coarsely.
  2. In a bowl with the chopped boiled chicken, add scallions.
  3. Then the cooked & chopped bacon.
  4. Add 1/2 cup of ranch dressing.
  5. 1 cup of mayonnaise.
  6. Shredded cheddar cheese..
  7. Then the seasonings: salt & pepper, garlic powder, paprika, and dried Italian herbs. Eyeball the measurements.
  8. Mix everything together.
  9. Transfer into a container. Cover and let it chill in the fridge until ready to assemble your sandwiches(or sliders).
  10. When ready to assemble, preheat oven to 350°. Butter both pieces of Ciabatta bread.
  11. Spread chicken salad on one piece.
  12. Top with smoked gouda cheese(or any cheese of your choice).
  13. Place the top portion of Ciabatta bread. Toast the sandwiches in the preheated oven for 10-15 minutes.
  14. VOILA! Chicken Salad In Ciabatta Bread

YUMMMM! Serve with fries on the side.
